Share the Wonder Recipe: Let’s Make Curried Sweet Potato Pancakes!
1 lb. sweet potatoes peeled
½ cup flour
2 teaspoons brown sugar
1 teaspoon baking powder
1/2 teaspoon cayenne powder
2 teaspoons curry powder
1 teaspoon cumin
salt and pepper
2 large eggs beaten
½ cup milk
Oil for frying
Grate sweet potatoes coarsely.
Separately mix dry ingredients.
Add eggs and just enough milk to make stiff batter.
Add potatoes and mix.
Heat oil until barely smoking.
Drop in batter by tablespoons and flatten.
Fry on each side till golden.
Drain on paper towels.
